If you like Italian Bresaola then you are likely to enjoy this wonderful Dorset Air-Dried Beef. It is made using the silverside of grass-fed PGI West Country raised beef. The beef is cured with herbs, spices and port before being slowly air-dried in a maturing room for several weeks. The beef is then thinly sliced, ready for you to eat.
The texture is firm but supple and the colour is a deep rich red with a flavour to match. The classic way to serve would be with salad of lettuce and rocket with shavings of parmesan and a drizzle of good quality extra virgin olive oil.
