Together, these grains have a unique, subtly sweet and earthy flavour. Blanco Nino works with farmers in Milpa Alta (meaning high corn field) which overlooks Lake Texcoco. This basin is home of the ancient Aztec capital city of Tenochtitlan, known today as Mexico City. Blanco Nino pays homage to the ancient Aztec way of cooking corn, known as nixtamalisation. To create the best tortilla chips possible, they only use non-GMO corn and source ingredients from heritage producers in Mexico.
