Sliced Cured Pork Fillet

The fillet is obtained from the pork loin. Salted and seasoned with spices and aromas, it stays in brine for about 10 days and is massaged daily. It is then washed with white wine and stuffed into a natural casing. It dried for around seven days and then put to mature for another 40 days.
